Beth Oden – Co-Founder and Program Director

Beth, Co-Founder and  Program Manager, is responsible for leading the Freedom Circles to healthier food choices and preparation. Beth’s love for food began at a very early age. She has fond memories of camping out in the garden with her grandfather, pickling beets with her grandmother and cooking home made meals for her family.

In 2006, Beth was inspired by Chef Ann Cooper, the Renegade Lunch Lady, to change the way America feed’s children at school and created a waste-free healthy lunch program at several pre-school and early childhood programs. In 2007, Beth returned to school at the Institute for Integrative Nutrition and received a certification in nutrition and health counseling from Columbia University’s Teachers College in New York City. She has studied under natural health and nutrition experts Marion Nestle, Andrew Weil, MD, Barry Sears, MD, Mark Hyman, MD, Mehmet Oz, MD, and Deepak Chopra.

Prior to establishing her nutrition coaching practice, Beth enjoyed an esteemed career in executive coaching and facilitating organizational change. She supported a variety of businesses, including DaimlerChrysler and Toyota, in achieving unparalleled standards of excellence. Beth combines her talents of teaching and coaching, with her nutrition knowledge to inspire individuals to create healthy habits to achieve and maintain healthy body weight. She promotes learning how to Shop Smart, Cook Healthy, Eat Right and Share Blessings. Beth is personally committed to making a global impact on hunger and obesity. She is the co-founder of Food, Faith and Family, a non-profit supporting families sharing a home cooked meals around the dinner table.

Beth earned a Bachelor’s degree in Therapeutic Recreation from the College of Saint Mary, in Omaha. She then pursued a Master’s of Education in Organizational Learning and Instructional Technologies at the University of New Mexico. Beth’s expertise in designing, developing and delivering cost-effective programs for non-profit and for-profit environments has opened up opportunities across the globe. One of her first positions after college was Director of Women’s Fitness for a community of 6,000 health professionals from thirty-six different countries at King Khaled Eye Specialist Hospital in Saudi Arabia.
